RED SPINACH RICE
Ingredients:
1/4 cup red spinach leaves (Lal Math or Amaranth leaves), chopped
1/4 cup brown rice (you can also use white rice if preferred)
1/2 cup water
1/4 teaspoon cumin seeds
1/4 teaspoon turmeric powder
1/4 teaspoon red chili powder (adjust to taste)
Salt to taste
1/2 tablespoon olive oil or ghee
Instructions:
Wash and chop the red spinach leaves finely. Set aside.
Rinse the brown rice thoroughly under cold water. If time permits, soak the rice in water for about 30 minutes to 1 hour. Drain the soaked rice before cooking.
In a small saucepan, heat olive oil or ghee over medium heat. Add cumin seeds and let them splutter.
Add chopped red spinach leaves to the pan. Stir and sauté for a minute until they begin to wilt.
Add the drained rice to the pan along with turmeric powder, red chili powder, and salt to taste. Mix well to coat the rice and spinach with the spices.
Pour in 1/2 cup of water and bring it to a boil. Once boiling, reduce the heat to low, cover the saucepan with a lid, and let it simmer for about 15–20 minutes or until the rice is cooked and water is absorbed. Stir occasionally to prevent sticking.
Once the rice is cooked, fluff it gently with a fork. Transfer to a serving plate. Serve the red spinach rice warm as a nutritious and filling meal.
