Red Spinach Rice

RED SPINACH RICE

Ingredients:

  • 1/4 cup red spinach leaves (Lal Math or Amaranth leaves), chopped

  • 1/4 cup brown rice (you can also use white rice if preferred)

  • 1/2 cup water

  • 1/4 teaspoon cumin seeds

  • 1/4 teaspoon turmeric powder

  • 1/4 teaspoon red chili powder (adjust to taste)

  • Salt to taste

  • 1/2 tablespoon olive oil or ghee

Instructions:

  • Wash and chop the red spinach leaves finely. Set aside.

  • Rinse the brown rice thoroughly under cold water. If time permits, soak the rice in water for about 30 minutes to 1 hour. Drain the soaked rice before cooking.

  • In a small saucepan, heat olive oil or ghee over medium heat. Add cumin seeds and let them splutter.

  • Add chopped red spinach leaves to the pan. Stir and sauté for a minute until they begin to wilt.

  • Add the drained rice to the pan along with turmeric powder, red chili powder, and salt to taste. Mix well to coat the rice and spinach with the spices.

  • Pour in 1/2 cup of water and bring it to a boil. Once boiling, reduce the heat to low, cover the saucepan with a lid, and let it simmer for about 15–20 minutes or until the rice is cooked and water is absorbed. Stir occasionally to prevent sticking.

  • Once the rice is cooked, fluff it gently with a fork. Transfer to a serving plate. Serve the red spinach rice warm as a nutritious and filling meal.
